DISTILLERIE DU CHANT DU CYGNE

Founded in 2020 by chemist-turned-distiller Pablo Lerey, Chant du Cygne is rooted in the Gaillac vineyard, where native grape varieties and natural winemaking shape the foundation of every spirit.

Working exclusively from the vine, the distillery produces its own alcohol base - distilling natural wines, grapes, marc, and lees - before layering in locally foraged or organically grown plants, berries, and roots. The result is a collection of spirits that feel alive, expressive, and deeply connected to their landscape.

Guided by the principles of gnôle naturelle and produced under the Nature & Progrès standard, the approach is uncompromising: no industrial neutral alcohol, no unnecessary intervention — just raw materials, time, and place.

Each bottle captures a dialogue between vineyard and surrounding wilderness - a quiet, grounded expression of Gaillac, designed to be shared and returned to.
